Morning Pastries to include, mini croissants, dansihes, muffins, quesitos, guava turnovers, asorted scones, assortment of bagels, white bread, whole wheat, sourdough, local jams and cream cheese.

Cold Selection to include local and exotic island fruit, pineapple, dragon fruit, crenshaw melon, papaya, mango, watermelon, chia seed mini parfait, diced mango and kiwi, almond milk, yogurt, tropical parfait bar, greek style yogurt, house made granola, fresh strawberries, blueberries, blackberries, toasted almond and coconut, international cheese with condiments and Tropical fruit jams.

Breakfast Station

Cage free scrambled eggs, hickory smoked bacon, country link sausage, island breakfast potato, biscuits and gravy, lemon ricotta pancakes.

Omelets and Brioche French toast made to order with different toppings.

Composed Salad Station:

  • Spring Mix Salad – spring time lettuce. Hot house cucumber, local tomato, pickled onion, carrots, growing sprouts and garden herb vinaigrette.
  • Quinoa Tabouleh Salad – apricots, cherry, spring onion, mint, jalapeno, tomato, ginger apricot dressing.
  • Heirloom Tomato Salad – mango, bocconcini mozzarella and garden basil salad.

Raw Bar on Ice:

Chilled gulf shrimp, and fresh oysters. MGV cocktail sauce, lemon and tebenero hot sauce.

Carving Station 

Carved a la Brasa Natural Turkey breast. Rocoto pepper crema, sourdough mini bread rolls.

Caribbean Mofongo stuffed slow Roasted porkloin, sofrito chicken.

Entrée Station

Gulf side Mangrove snapper, slow roasted baby fennel and onion soubise, passion fruit vinaigrette.

Blistered asparagus, lemon vinaigrette.

Crushed fingerling potatoe, scallions and parmesan with fresh herbe.

Jimmy’s Jammin’ jambalaya shrimp, chicken and andouille sausage simmered in a spicy broth with rice.

Deconstructed volcano nachos, chips, chili, cheese, pico de gallo, guacamole, sour cream and jalapenos.

Crème Brulee Station – vanilla, chocolate, and pistachio – caramelized to order

Red velvet cupcakes, chocolate chips, bread pudding with vanilla anglaise, flourless chocolate bites.
